After six years of planning, Cabot's Cookery School opens on the outskirts of Westport

New Cookery School opens in Mayo

LAST Saturday week was an important day for local business Cabots of Westport as they opened a dedicated cookery school built on twelve acres of organic farmland, overlooking Kinloey Lough close to the village of Aughagower on the outskirts of Westport. Sandra and Redmond Cabot have planned the school since buying the land from local farmer Peter Heraty of Sandyhill in 2019.

In 2020 they secured planning permission for the school, and then engaged with local development company, Leader, to secure funding for the project. This was granted in 2021 and after a challenging environment with price inflation the building was completed late this Autumn.

Welcoming customers to their cookery class a happy Redmond Cabot said how delighted he was to see them come through the doors: “This cookery school is all about fresh, natural produce. Where you get your produce from is so important. We are blessed to the highest degree here in Mayo with our local producers.”

The first customers learnt a range of Christmas starter dishes that can be prepared in advance to buy the chef some time while able to impress diners.

“It was an extremely enjoyable day, both for the instructors' and students,” added Sandra Cabot. “Everyone worked together, swopped tips and learnt something new. The highlight was sitting down to a lunch we had all prepared together, enjoying the food and having a laugh. We were all very proud of ourselves. There was a mix of ages which didn't matter a bit - everyone bonded over the cooking and chatted together over lunch like old friends.”
